Enjoy, Joyce. Happy Thanksgiving to you. Thanks for all you do to help us understand these times we are enduring.

I don’t know what I’d do without your wisdom and kindness. I am thankful for you. Enjoy your family.

So totally agree with you Kim. Thank you so much, Joyce. Lol, with those two beautiful girls was hoping you were a vegetarian. Always feel so bad.

Ah, if those girls get eaten, I feel sure they will leave this earth quickly and with no knowledge other than that they were loved and valued.

Mim, Kim & Deb, we all seem to agree that this holiday we have Joyce and her therapy chicks to add to each of our Thanksgivings. Indeed, what would I do without her? Also, what would those splendid chickens be without her care and love?

It turns out that poultry is pretty bad for you. Google "Advanced glycation end products" (cooked poultry is full of them) or see "How Not To Age," by Michael Greger, MD.

Completely agree; thank you for saying it so well. Joyce, a favorite dish in our family is the Cranberry Horseradish Mousse recipe that appeared in Bon Appetit in 1979. Or as my aunt immediately dubbed it, "Horseberries." Happy Thanksgiving to all.

My feelings exactly.

Hello Joyce. I know this is out of context but I want to introduce this idea into the mix asap. It looks like the ERA could be ratified if the National Archivist, Dr. Colleen J. Shogan, who is the first woman in this position signed it. And theoretically Biden could make that happen. That would go a looong way in girding for the next administration's shenanigans. Am I wrong?

Expand full comment

According to the American Bar Association (The League of Women Voters, the American Association of University Women, the American Constitution Society, and 300 other organizations across the country) the ERA has successfully been ratified and the president – in one of his final acts in office – has the authority to direct the Archivist of the United States to certify and publish it as the 28th Amendment to the Constitution. Article V of the Constitution, which sets out how the Constitution can be amended, does not say Congress can place a time limit on ratification (it is silent on the issue, although there is precedent), nor does it allow states to rescind their ratifications of an amendment, two issues raised by the opposition. Congress had placed a time limit for ratification and six states have rescinded their ratifications (Nebraska,Tennessee, Idaho, Kentucky, North Dakota and South Dakota).

Correct Dale. I am an active American Bar Association (ABA) member. On 8/6/24 the ABA House of Delegates adopted a resolution declaring the Equal Rights of Amendment FULLY ratified as the 28th Amendment to the U.S. Constitution. 🇺🇸

You will soon be on the dance floor. (From "Donald's Vanity Tantrums")

Welcome to The New Snazzy Nazi States of America

(Introducing The Goose-Step, Two-Step March)

A new dance craze is sweeping the nation called, The Goose-Step, Two-step March. This invigorating new exercise is easy to learn! First, link arms on the dance floor. As you move backward in line, turn your head to the right and lift your left leg straight up as high as it will go. Then step forward as you turn your head to the left and lift your right leg straight up in the air.

It's very similar to square dancing or line dancing. Soon the dance floor will be filled with goose-steppers. Forward, backward, round and round. If you step out of line, you are tagged, the caller detains you, interrogates you, strip searches you, and sends you off to detainment camps for disloyalty.

This new dance craze is not to be confused with serious charges of criminal activity. By the time the youngins reach the age of reason, they will be quick to form into lines upon request for impromptu Goose-Step, Two-Step Marches and other forms of family entertainment

Italian spinach from NY Times cookbook with garlic, butter, olive oil, a bit of cayenne and Parmesan. It gives a dark green color to a plate of brown and orange food and a bit of contrasting spice. Yummy dish!

Expand full comment

Nice! I would pair it with a lovely Italian white wine from Abruzzo (also Le Marche) known as Pecorino. 👍👍👌

Aha! And I thought Pecorino was "only" a cheese, Pecorino-Romano, which Southern Italians prefer over parmesan for seasoning their dishes.

Enjoy the commotion, cook what you can without killing yourself and buy anything’s that is missing. Doing so much that it becomes “hard” takes away from the fun.

Expand full comment

I think "hard" is part of the fun when everybody at the house joins in the "hardship." Shared accomplishment is fun to me. (But I really don't like it when all the womenfolk are in the kitchen and all the men are watching football, so if that's the vibe then absolutely I'll order frickin' DoorDash. :) )

Spatchcock your turkey ( I do 2) and fresh cranberry sauce. Just follow directions on the bag. I’m all for keeping it simple. Bon appetite 🥂

I think it's very nice to substitute fresh orange juice (fresh pressed from store is fine) for the water in the recipe for fresh cranberry sauce. Also consider adding walnut pieces for a little crunch.

Ditto. Orange juice in lieu of some or all the water. And I throw in orange zest. So easy!

I do this too, but I also add fresh blueberries and the orange zest at the very end.

😍such a fine idea... I would opt for the "dry Curacao" from Pierre Ferrand... sublime.

I always used Grand Marnier, but have switched to GranGala, as it is more reasonably priced and just as good. For port, any old port as long as not super sweet, but if it is, decrease the sugar....

I also ad orange marmalade and coconut with the pecans and orange juice! Oh and a lot of sugar!

Yum! I make orange marmalade every winter, grapefruit marmalade too, which would be wonderful in this recipe.

I remember when I learned how easy it is to make fresh cranberry sauce! I use orange juice as part of the liquid and throw in some orange zest.

I also put in a splash of Grand Marnier

Expand full comment

Yes Suzanne, fresh cranberries cooked according to the instructions on the bag are delicious! And are an all American dish! That beautiful red color is wonderful too.

adding dried dark cherries is also good...not too sweet

Expand full comment

Yes I do orange juice also and add grated orange skin…..I also cut the recommended sugar too. But then I prefer the tart taste of cranberries. 😝

I make cranberry sauce by throwing a can of crushed pineapple, a jar of apple sauce, a bag of cranberries and a box of blueberries in a covered saucepan and cooking it until the berries start popping. It makes a great waffle/pancake topping too.

This is THE best mashed potatoes recipe. EVER. You can make it in advance, it bakes in the oven so that it is piping hot when time to serve, and the leftovers (if there are any) taste as good as the day it was served.

Holiday Mashed Potatoes

★★★★★

Side Dish

Servings: 8+

Ingredients:

3-4 pounds red potatoes or Yukon Gold, peeled & cooked

8 oz cream cheese, room temperature

1/4 cup butter

1/4 cup sour cream

1/2 cup milk

2 eggs, slightly beaten

1 tbsp salt

pepper to taste

Directions:

Mash potatoes while still warm; add cream cheese in small pieces, then butter. Beat well; add sour cream, milk, and eggs. Add salt and pepper. Beat until fluffy. Note: It may be a little soupy, but that's ok! Do not attempt to firm it up.

Place in greased casserole and refrigerate until ready to bake.* If the dish comes to room temperature, it'll bake more quickly.

Bake in preheated 350-degree oven for 45-60 minutes or until lightly browned on top.

*Unbaked recipe can be frozen. If frozen, allow dish to defrost before baking.

Leftovers can be reheated in the microwave and will taste as great as the day you served them.

YES! My mashed potato recipe is a lot like this, with cream cheese. So yummy you don't need gravy! I add canned French fried onions on top the last 15 or so minutes of baking.

founding

But you should have gravy anyway. Always choose gravy.

Expand full comment

And you’d never know all of those ingredients are used - just tastes like perfect potatoes.

Expand full comment

Definitely use red potatoes. They're the yummiest. My recipes has one chopped onion in it.

Expand full comment

Best way to peel small potatoes is after they are cooked. Use a dish towel, one end in each hand and rub, and the skin comes right off. Works like a charm. It’s much easier than trying to use a peeler on smaller potatoes. And yes, you can use the larger ones, however, the smaller ones are more tender and a tad nuttier, imo. Your mileage may vary.

Using purple potatoes will give you an absolutely lovely dish with quite a nutty flavor.

I came here to share this recipe also! I tend to add more sugar as I mostly follow the Ocean Spray recipe on their website which calls for 12 oz. fresh cranberries, 3/4c. sugar, 1 whole orange. That recipe does not include nuts, but I’ve usually added walnuts or pecans.

I make the desserts for family get togethers and I'd recommend that you check out Marissa Rothkopf's Substack, The Secret Life of Cookies. I think David is her brother. Today she published Almond Cranberry Frangipane Brownies. It sounds fancy but it's pretty simple and straight-forward to make. I plan on making it next week. I'd also recommend that you check out King Arthur Baking Company's website which is full of recipes. I also plan making the Pecan Pie Bars they have or the Pecan Crusted Sweet Potato Pound Cake recipe. You can get a good dopamine release cooking, baking and eating and we all need this.
